Chocolate Avocado Cookies

We all know avocados go from 0 to 100 when it comes to ripening. But did you know you can turn an avocado into a fudgey cookie??

These are so good and you’d never guess the secret ingredient! If you have an avocado that’s ready to go, give these soft chocolate avocado cookies a try!

Ingredients:

1 ripe avocado, mashed
½ cup brown sugar
1 egg
½ teaspoon vanilla extract
½ cup unsweetened cocoa powder
⅓ cup flour
½ teaspoon baking soda
Chocolate chips (optional)

Directions:

Combine avocado, sugar, egg and vanilla.

In a separate bowl, mix cocoa powder, flour and baking soda.

Combine the wet and dry ingredients. Fold in chocolate chips if using.

Spoon 1 Tbsp size balls onto greased baking sheet and bake at 350 for 8-10 minutes or until set.
