Healthy Morning Glory Muffins

Anyone else have kids who request to eat the second they wake up? 😅

I always like to have a healthy option ready so we avoid the pre-packaged, sugary breakfast treats as much as possible, and these are a go-to.

They're loaded with nutritious ingredients but have a slightly sweet and satisfying taste that even the pickiest eaters will enjoy.

Ingredients:

1 3/4 cup whole wheat flour
1/4 cup ground flaxseed
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup brown sugar
1/4 cup honey
1/3 cup melted coconut oil
1/3 cup applesauce
1/3 cup orange or pineapple juice
1 teaspoon vanilla extract
1 cups shredded carrots (I throw a couple in the food processor)
1/2 cup shredded/grated apple
1/2 cup raisins

Directions:

1. Mix dry ingredients (excluding brown sugar)
2. Mix wet ingredients, plus brown sugar; then add carrots, apples & raisins
3. Add wet ingredients to dry ingredients and mix well
4. Fill muffin pan; bake at 425 for 5 minutes, then reduce oven to 350 (while leaving muffins in the oven) and bake for another 15-18 minutes.
