No-Bake Peanut Butter Pumpkin Balls

More often than not when I make healthy snacks, my husband doesn’t like them. I am happy to say that this one was an exception!

The whole family loves these peanut butter balls and they’re a super easy and healthy treat.

Ingredients:

2 cups oats ground in food processor
1/2 cup peanut butter (microwave a bit if it’s not creamy/melty)
1/2 cup pumpkin puree
1/4 cup honey
1 tsp cinnamon
1 tsp vanilla extract
Salt pinch
Optional chocolate chips (I used mini)

Directions:

Combine ingredients (except chocolate chips) in food processor until combined.

Stir in chocolate chips.

Roll into small balls and place on a plate.

Refrigerate for at least 30 minutes until firm.
